Step by Step Method

Step 1

Cover the cucumbers, onions and salt with water and let set for 2 hours; Drain and rinse with cold water..

Step 2

Bring to a boil, 2 cups sugar with 1 cup white vinegar and 1/2 tsp. pepper; Pour over Cucumber & Onion mixture and refrigerate 24 hours.

Great way to prepare cucumbers. Used English cukes and followed as directed (did not de-seed them). They came out flavorful and retained their crispiness. These would be great with a multitude of things; burger, pulled pork, on salads, fish, etc. and on their own. Added a bit of whole garlic . Thank you, DeeCooker41, for sharing. A wonderful ways to use Cucumbers. I was not sure how to prepare the cucumber ~ whether to de seed them or how to cut them, so I went with my instincts. I deseeded them and cut them into halves. I made as written although - I did add some dried chilli & I only refrigerated for 12 hours as I did not have them time for 24 hours. We did like these, although everybody agreed they were a little sweet, so next time I will cut the sugar down a little. A really wonderful recipe, that made for a lovely side salad. Added Note: I had some of this salad left over from yesterday and served it again for dinner, it is indeed a different salad after 24 hours. Not as sweet and more of a pickled taste. Three of us loved it.
