Step by Step Method

Step 1

Preheat oven to 350°F. Coat the inside of a 1-quart casserole dish with cooking spray.

Step 2

Combine squash and apples with lemon juice and cinnamon in a large bowl. Toss to coat well. Place in casserole.

Step 3

Sprinkle with brown sugar. Pour apple juice over mixture.

Step 4

Cover casserole with lid or foil and bake 1 hour, or until squash is tender.

This is a no fuss, easy to make recipe. The hardest part is peeling and cutting the squash. Lovely blend of flavours - the lemon & apple juice add a special taste. I love cinnamon with squash. This recipe is a winner and will be made again
