TO MAKE THE LEMON GLAZE


Step 1

In a saucepan, combine the corn starch with the lemon juice. Mix in the lemon rind, chicken stock, ginger and brown sugar; bring to the boil and cook for 1 minute stirring constantly until thickened. Set aside while preparing chicken.

TO MAKE THE CHICKEN


Step 2

Lightly beat together the egg whites and water in one bowl.

Step 3

Then in another bowl, mix together flour, cornmeal, garlic powder, salt, pepper.

Step 4

Dip the chicken in the egg white mixture, and then in the flour mixture to coat evenly.

Step 5

Heat the oil in a wok or frying pan and fry the chicken until the juices run clear. Place in a large shallow bowl. Pour the lemon sauce over chicken.

Step 6

Garnished with chopped green onion.

I made this for my hubby for Valentine's Day and we both loved it. The sauce was so good and really made the chicken. A must do again soon kind of dinner!

Opinions varied from a 3 to a 5. Some thinking it was great were others were not keen on the breading mix and the same with the sauce some absolutely loved it and others went no. Thank you Blinky for posting the recipe as I think it is worth giving a tray and as I used chicken breast sliced into strips when making again I would slice it into snitchel slices. Made for Billboard Recipe tag game.
