Ingredients

  • FOR LEMON GLAZE
  • 1 tablespoon cornstarch
  • 1/4 cup lemon juice (fresh)
  • Lemon zest (from 1 whole lemon))
  • 1 1/2 cup chicken stock
  • 1 teaspoon grated ginger root (fresh)
  • 1 tablespoon brown sugar
  • FOR CHICKEN
  • 2 egg whites
  • 2 tablespoons water
  • 1/2 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 pound boneless skinless chicken breast (tenderloins)
  • Oil, for frying
  • Garnish
  • Green onion, chopped

How to Make

  • TO MAKE THE LEMON GLAZE

  • Step 1: In a saucepan, combine the corn starch with the lemon juice. Mix in the lemon rind, chicken stock, ginger and brown sugar; bring to the boil and cook for 1 minute stirring constantly until thickened. Set aside while preparing chicken.

  • TO MAKE THE CHICKEN

  • Step 2: Lightly beat together the egg whites and water in one bowl.

  • Step 3: Then in another bowl, mix together flour, cornmeal, garlic powder, salt, pepper.

  • Step 4: Dip the chicken in the egg white mixture, and then in the flour mixture to coat evenly.

  • Step 5: Heat the oil in a wok or frying pan and fry the chicken until the juices run clear. Place in a large shallow bowl. Pour the lemon sauce over chicken.

  • Step 6: Garnished with chopped green onion.
