Step 1: In a saucepan, combine the corn starch with the lemon juice. Mix in the lemon rind, chicken stock, ginger and brown sugar; bring to the boil and cook for 1 minute stirring constantly until thickened. Set aside while preparing chicken.
Step 2: Lightly beat together the egg whites and water in one bowl.
Step 3: Then in another bowl, mix together flour, cornmeal, garlic powder, salt, pepper.
Step 4: Dip the chicken in the egg white mixture, and then in the flour mixture to coat evenly.
Step 5: Heat the oil in a wok or frying pan and fry the chicken until the juices run clear. Place in a large shallow bowl. Pour the lemon sauce over chicken.
Step 6: Garnished with chopped green onion.
