Step by Step Method

Step 1

In small bowl prepare streusel topping by combining the last three ingredients, mix the sugar and flour cut in the butter set aside.

Step 2

In large mixing bowl, measure flour, baking powder and salt; whisk to mix and set aside.

Step 3

Separate eggs, yolks in small bowl, whites beaten to stiff peaks in a larger bowl; set aside

Step 4

Cream together butter and sugar in large bowl until light and fluffy, add egg yolks and vanilla extract mixing to blend.

Step 5

Add baking soda to the buttermilk, add to batter mix. Stir in mashed bananas.

Step 6

Add dry ingredients stirring until mixed, gently fold in the stiffly beaten egg whites.

Step 7

Fill greased or paper lined muffin cups two thirds full, topping with a sprinkling of the streusel topping mix

Step 8

Bake in a 350 degree oven 20- 25 minutes or until golden brown, temperatures vary from oven to oven.

These sure are good...but I have never used so many bowels at one time...also the prep time is way off...it took me 10 mins to just read thru the recipe and pull the ingredients and all the bowls...I made as posted but did add a few chopped pecans in the topping for texture...made for "Bill Board" tag game...

I will agree with you 100%. These are the best! Loved the streusel! I added pecans and they went well with the topping and banana. These will be enjoyed many times!
