Step 1

Rub breasts with lemon juice, salt, pepper, and a little flour.

Step 2

Sauté in butter 7 minutes each side.

Step 3

Remove to baking dish.

Step 4

Mix above ingredients in sauté pan, scraping well.

Step 5

Strain over breasts.

Step 6

Sprinkle with parmesan cheese and broil until lightly browned.

Chef Potpie

I usually butterfly my chicken breasts, so that's what I used here. Much thinner and good to serve for just the two of us. That said, I browned them for half the time, but I made the full amount of sauce to go with some pasta. WOW! Yummy sauce, the chicken was great, (my picture doesn't do credit because it was drowning in the sauce, sorry!), and DH doesn't care for too much lemon. Well, the lemon was not overpowering, and the sauce was wonderful. I asked him if he noticed a certain taste, and he said, "Maybe a faint citrus?" HAHA! I served this with "Walkaway Noodles" and roasted asparagus. It was a fabulous meal. This one is another keeper, Dee, thanks!

This recipe makes a very tender piece of chicken that's packed full of flavor...the lemon isn't overpowering...the cream sauce adds a nice touch...I used dry vermouth...loved the parm cheese on top...made for FYC tag game...
