Step by Step Method

Step 1

Preheat the oven to 350 degrees.

Step 2

Line 18 large muffin cups with paper liners.

Step 3

Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend.

Step 4

Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour and butter mixture. Scrape the bowl and blend well. Do not over mix.

Step 5

Fold the diced bananas, walnuts, granola, and coconut into the batter.

Step 6

Spoon the batter into the paper liners, filling each one to the top.

Step 7

Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean.

Step 8

Cool slightly, remove from the pan, and serve.

Wonderful muffins -- I was able to get 24 good sized muffins from the recipe. I skipped the walnuts and used unsweetened coconut but otherwise made as directed. Next time I may reduce the sugar a bit as the granola also has some sugar in it I think, but these are wonderful just as they are and different from the usual. Thanks for sharing!

We love these muffins too! The addition of the nuts, granola and coconut lends a wonderful chewiness. Even my fussy GS had one for brekky every morning he was here. The large batch allows me freeze some. Definitely a keeper! Thanks Pia for sharing. Made for Billboard Recipe Tag.
