Step by Step Method

Step 1

Preheat oven to 400 degrees F. Coat a baking sheet with nonstick cooking spray.

Step 2

Sift flour, baking powder, salt and baking soda together in mixing bowl and set aside.

Step 3

Cream shortening and butter with sugars in mixing bowl until light and fluffy. Beat in eggs and vanilla.

Step 4

Mix in mashed bananas. Add flour mixture and stir until just combined. Stir in chocolate chips.

Step 5

Drop by small spoonfuls onto prepared baking sheet. Bake for 12 to 15 minutes or until edges start to brown.

Great Cakey Cookie! Mmm...Banana & chocolate together in hand-held cake cookies! I made some changes to make these a bit healthier: half whole wheat pastry flour, subbed coconut oil for the shortening, used half Splenda for the white sugar, and only 1 cup of chocolate chips. I tagged these in the Billboard recipe tag game to make in a frying pan on my stovetop since my oven broke, they sounded like they would work, and they did! The batter is more like cake batter, and they cooked up just like mini pancakes! My Hubby and picky 3 year old loved them too.
