"Adapted from several recipes. For the buttermilk I add 1 tablespoon lemon juice or vinegar to a 1 cup measuring cup then add milk to the 1 cup line, stir and let sit for 10 minutes."

Step by Step Method

Step 1

Pre-heat oven to 350°F.

Step 2

Beat sugar and butter at medium speed with an electric mixer until creamy. Add eggs, buttermilk, bananas, and vanilla, beating until well blended.

Step 3

Combine flour and next 3 ingredients, add to banana mixture, beat with electric mixer on medium speed until smooth. Stir in chopped walnuts.

Step 4

Spray 2, 8x4-inch loaf pans with non-stick and fill each half full with batter.

Step 5

Bake at 350°F for 45 minutes to 1 hour or until a wooden pick inserted in center comes out clean. Cool on a wire rack 10 minutes, remove loafs from pans, and cool completely on wire rack.

Very good banana bread recipe. I did not use a full cup of nuts as I didn't have enough on hand (had about 3/4 cup) and cooked for 1 hour 10 minutes. This dissapeared in no time. Thanks for sharing your recipe.
