Step 1: Pre-heat oven to 350°F.
Step 2: Beat sugar and butter at medium speed with an electric mixer until creamy. Add eggs, buttermilk, bananas, and vanilla, beating until well blended.
Step 3: Combine flour and next 3 ingredients, add to banana mixture, beat with electric mixer on medium speed until smooth. Stir in chopped walnuts.
Step 4: Spray 2, 8x4-inch loaf pans with non-stick and fill each half full with batter.
Step 5: Bake at 350°F for 45 minutes to 1 hour or until a wooden pick inserted in center comes out clean. Cool on a wire rack 10 minutes, remove loafs from pans, and cool completely on wire rack.
