"This is an easy gluten free banana bread recipe. I don't like mine overly sweet but if you have a sweet tooth you can increase the amount of sugar."

Step by Step Method
Step 1
In a large bowl, combine the flour, sugar, pine nuts, baking soda and salt.
Step 2
In another bowl, whisk together the eggs, apple sauce, oil and vanilla.
Step 3
Stir into the dry ingredients along with the mashed bananas and quinoa.
Step 4
Coat two loaf pans with non-stick spray.
Step 5
Pour the mixture, dividing it evenly into the loaf pans and bake in a preheated 350 degree Fahrenheit oven for about 45 minutes, until a toothpick comes out clean when inserted in the middle of loaf.
Step 6
Allow to cool completely.
Step 7
Slice and serve.
