  • 2 cups gluten-free all-purpose flour
  • 3/4 cups granulated sugar
  • 1/2 cup pine nuts (can use other type of nuts)
  • 1 teaspoon baking soda
  • Pinch salt (generous pinch)
  • 4 large eggs
  • 1/2 cup applesauce
  • 1/4 cup almond milk
  • 1/4 cup oil (vegetable oil)
  • 1 teaspoon vanilla extract
  • 4 medium bananas, mashed (very ripe)
  • 1 cup cooked quinoa

How to Make

  • Step 1: In a large bowl, combine the flour, sugar, pine nuts, baking soda and salt.

  • Step 2: In another bowl, whisk together the eggs, apple sauce, oil and vanilla.

  • Step 3: Stir into the dry ingredients along with the mashed bananas and quinoa.

  • Step 4: Coat two loaf pans with non-stick spray.

  • Step 5: Pour the mixture, dividing it evenly into the loaf pans and bake in a preheated 350 degree Fahrenheit oven for about 45 minutes, until a toothpick comes out clean when inserted in the middle of loaf.

  • Step 6: Allow to cool completely.

  • Step 7: Slice and serve.
