Step 1: In a large bowl, combine the flour, sugar, pine nuts, baking soda and salt.
Step 2: In another bowl, whisk together the eggs, apple sauce, oil and vanilla.
Step 3: Stir into the dry ingredients along with the mashed bananas and quinoa.
Step 4: Coat two loaf pans with non-stick spray.
Step 5: Pour the mixture, dividing it evenly into the loaf pans and bake in a preheated 350 degree Fahrenheit oven for about 45 minutes, until a toothpick comes out clean when inserted in the middle of loaf.
Step 6: Allow to cool completely.
Step 7: Slice and serve.
