"Parsnips are a wonderful vegetable especially when cooked like this. Very easy recipe with tasty results. Try to get nice white parsnips of medium size. You don't have to remove the core but they are more tender when you do take the time to cut it out."

Step by Step Method
Step 1
Peel the parsnips, cut into quarters lengthwise
Step 2
Place water in a pot and bring to a boil
Step 3
Add parsnips to boiling water and cook for about 5 minutes or until the parsnips are almost cooked
Step 4
Drain well and when cool enough to handle gently remove the hard center core
Step 5
Place parsnips in a baking dish and place the cut apples over them
Step 6
Mix the applecider, brown sugar and nutmeg and pour over the parsnips
Step 7
Bake in 375f oven for 25 minutes - the apples and parsnips will be golden
