Step 1: Peel the parsnips, cut into quarters lengthwise
Step 2: Place water in a pot and bring to a boil
Step 3: Add parsnips to boiling water and cook for about 5 minutes or until the parsnips are almost cooked
Step 4: Drain well and when cool enough to handle gently remove the hard center core
Step 5: Place parsnips in a baking dish and place the cut apples over them
Step 6: Mix the applecider, brown sugar and nutmeg and pour over the parsnips
Step 7: Bake in 375f oven for 25 minutes - the apples and parsnips will be golden
