Ingredients

The ingredients are:
  • 1 pound parsnips (medium sized, peeled)
  • 2 cups water
  • 3/4 pound apples (2 apples, peeled, cored, cut into quarters, 1/4 inch slices)
  • 1 cup apple cider (or apple juice)
  • 3 tablespoons brown sugar (or brown sugar Splenda)
  • 1/4 teaspoon ground nutmeg (or less)

How to Make

  • Step 1: Peel the parsnips, cut into quarters lengthwise

  • Step 2: Place water in a pot and bring to a boil

  • Step 3: Add parsnips to boiling water and cook for about 5 minutes or until the parsnips are almost cooked

  • Step 4: Drain well and when cool enough to handle gently remove the hard center core

  • Step 5: Place parsnips in a baking dish and place the cut apples over them

  • Step 6: Mix the applecider, brown sugar and nutmeg and pour over the parsnips

  • Step 7: Bake in 375f oven for 25 minutes - the apples and parsnips will be golden
