Step by Step Method

Step 1

In shallow bowl, mix together breadcrumbs, Parmesan cheese and 1/2 teaspoon dried Italian seasoning. Dip chicken breasts into egg, then crumb mixture (coat really well in the dry mixture).

Step 2

In fry pan over medium-high heat melt together 1 tablespoon butter and oil. Brown chicken in butter-oil mixture on both sides. Place browned chicken in single layer in a greased 11x7 inch baking dish.

Step 3

In same fry pan over medium heat, melt remaining 2 tablespoons butter. Saute mushrooms in butter until softened. Stir in flour and garlic powder (mixture will be lumpy). Gradually stir in chicken broth. Cook and stir until sauce thickens. Stir in wine and 1/4 teaspoon Italian seasoning. Cook until smooth and bubbly. Season with salt and pepper.

Step 4

Pour sauce over chicken. Cover. Bake at 350°F 40 to 45 minutes or until chicken is thoroughly cooked and no pink remains. Spinkle with parsley.

I made a 1/2 recipe though at DH's request omitted the cheese and I lightly pounded out the chicken breasts for an even thickness and all up they took 30 minutes in the oven at 175C and the chicken was moist and flavourful and the mushroom sauce devine. The DH has requested to have again but would prefer the chicken not to be crumbed so look forward to trying it that way. Thank you foodiegal, made for What's On The Menu tag game at FF&F.
