Ingredients

The ingredients are:
  • 1/2 cup breadcrumbs (dry)
  • 1/4 cup Parmesan cheese, grated
  • Italian seasoning (1/2 plus 1/4 teaspoon, divided)
  • 1 to 1 1/4 pounds boneless skinless chicken breasts (4 fillets)
  • 1 large egg (lightly beaten)
  • 3 tablespoons butter (divided)
  • 1 tablespoon oil
  • 3 cups sliced mushrooms (sliced fresh mushrooms)
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon garlic powder
  • 1 cup chicken broth
  • 1/2 cup wine (dry white wine)
  • Salt and pepper
  • 2 tablespoons chopped parsley (fresh)

How to Make

  • Step 1: In shallow bowl, mix together breadcrumbs, Parmesan cheese and 1/2 teaspoon dried Italian seasoning. Dip chicken breasts into egg, then crumb mixture (coat really well in the dry mixture).

  • Step 2: In fry pan over medium-high heat melt together 1 tablespoon butter and oil. Brown chicken in butter-oil mixture on both sides. Place browned chicken in single layer in a greased 11x7 inch baking dish.

  • Step 3: In same fry pan over medium heat, melt remaining 2 tablespoons butter. Saute mushrooms in butter until softened. Stir in flour and garlic powder (mixture will be lumpy). Gradually stir in chicken broth. Cook and stir until sauce thickens. Stir in wine and 1/4 teaspoon Italian seasoning. Cook until smooth and bubbly. Season with salt and pepper.

  • Step 4: Pour sauce over chicken. Cover. Bake at 350°F 40 to 45 minutes or until chicken is thoroughly cooked and no pink remains. Spinkle with parsley.
