"This was one of son's favorite sammys, they are especially great using garden tomatoes, I make them using Pepper Jack cheese but American cheese slices works good also. Butter amounts stated in instructions may be adjusted to your taste"

Step by Step Method

Step 1

Spread about 1 tablespoon butter into the bottom of a large skillet (or just leave some fat in the pan from the bacon).

Step 2

Spread 1 tablespoon (can use more) onto one side of each slice of bread. Place the 4 slices of bread butter-side down onto a large skillet or flat grill. Top with 1 slice of cheese, 2 slices of tomato and 2 slices cooked bacon, then 1 more slice of cheese.

Step 3

Cover with a slice of bread (butter-side facing outside). Fry over medium turning once with a spatula until golden brown on both sides.

Very good sandwich! I misread and only used 1 slice of cheese per sandwich, and it was great as is. But then, how can you miss when there's bacon involved?!

The hubby really enjoyed his lunch today...I had some leftover tomato and selected this sandwich to help use it up...he loved the bacon...I used american cheese and served it with a nice tomato soup...made for "Best of 2022" tag game per ForEverMama's recommendation....

Amazing how simple everyday ingredients turned out some terrific tasting sandwiches. Used freshly picked garden tomatoes and used a crusty sturdy Tuscan slice bread that came out nice and crispy. We had these with a vegetable tomato soup and was it ever the perfect accompaniment. My main squeeze kept on thanking me. Thank YOU, Kittencal, for sharing this goodie.
