"Here is asparagus recipe that is steamed and then covered with a light airy wine sauce that is finished with cheese. Good enough for company."
Clean and trim the asparagus (cutting the bottom portion which is hard and fibrous).
Simmer until tender about 8 - 10 minutes.
Mix lemon juice, white wine, egg yolk, salt, pepper, and sugar on top of double boiler over low heat; beat with a wire whisk until sauce doubles in volume.
Spread drained asparagus in a 1 1/2 quart oven proof baking dish and pour sauce over asparagus.
Sprinkle with cheddar cheese and broil until bubbly and cheese it melted.
