Step 1: Clean and trim the asparagus (cutting the bottom portion which is hard and fibrous).
Step 2: Simmer until tender about 8 - 10 minutes.
Step 3: Mix lemon juice, white wine, egg yolk, salt, pepper, and sugar on top of double boiler over low heat; beat with a wire whisk until sauce doubles in volume.
Step 4: Spread drained asparagus in a 1 1/2 quart oven proof baking dish and pour sauce over asparagus.
Step 5: Sprinkle with cheddar cheese and broil until bubbly and cheese it melted.
