Ingredients

The ingredients are:
  • 2 pounds asparagus (fresh)
  • FOR SAUCE
  • 1 teaspoon lemon juice
  • 1/2 cup dry white wine
  • 3 egg yolk
  • Salt and pepper, to taste
  • Sugar, to taste
  • 1/2 cup cheddar cheese, grated (sharp)

How to Make

  • Step 1: Clean and trim the asparagus (cutting the bottom portion which is hard and fibrous).

  • Step 2: Simmer until tender about 8 - 10 minutes.

  • Step 3: Mix lemon juice, white wine, egg yolk, salt, pepper, and sugar on top of double boiler over low heat; beat with a wire whisk until sauce doubles in volume.

  • Step 4: Spread drained asparagus in a 1 1/2 quart oven proof baking dish and pour sauce over asparagus.

  • Step 5: Sprinkle with cheddar cheese and broil until bubbly and cheese it melted.
