Step by Step Method

Step 1

On individual serving plates divide and stack the lettuce, chicken, pineapple, apple (or grapes) and capsicum (bell pepper).

Step 2

In a small jug whisk the soy sauce (or tamari), lemon juice, peanut butter, honey and chilli flakes.

Step 3

Drizzle the dressing between the 4 serves.

Excellent easy salad! I had everything on hand except for the fresh pineapple, so I used canned because at the moment we don't get good fresh pineapples here. I used tamari, and I had to add some water to the dressing because it got quite thick. Thanks for sharing :) Made for For Your Consideration.

I elected to assemble the individual salads cobb style and the ingredients made a colorful plate. The dressing is tasty, but I didn't feel it made enough for 4 salads. I prepared the whole amount although I was only making 2 salads and we used all of the dressing. I will be making the dressing again. It's easy to make and has many potential uses.
