Step by Step Method

Step 1

Preheat oven to 325F degrees. In a skillet, saute onion in butter until transparent; add artichokes and liquid from one jar. Heat for 2 minutes.

Step 2

In a bowl, lightly beat eggs; add cheese, bread crumbs, artichoke mixture, and bacon. Mix together and place in a greased 9-inch quiche pan.

Step 3

Bake for 25 minutes, until set. Sprinkle frittata with jack cheese, if desired, and bake for 5 more minutes.

Step 4

Comments: All can be done the night before; keep the egg and artichoke mixture separate. Add together in morning and bake.

Smells Like Salad

Sadly, Pookie's is no longer around-either changed their name or new ownership. That said, at least this recipe is still around. It's deelish and I don't even much care for frittata. I prepared it with local crispy "bacon ends" (like to live dangerously) and subbed pecorino romano. Another excellent recipe posted by you, lazyme! Thanks!
