Step by Step Method
Preheat oven to 375 degrees F.
In a roasting pan add the chicken, skin side up and season with salt and pepper and then sprinkle with the ginger.
Spread the marmalade over the chicken.
Then pour the two juices (apple and orange) over all.
Place in oven and bake for 20 minutes.
Remove from oven and scatter the dried apricots and currants into the pan and around the chicken pieces.
Return to oven and bake for 45 minutes or until chicken is golden brown, basting frequently.
Transfer chicken and fruits to serving platter and spoon the pan juices over the chicken and the dried fruits.
Serve the remaining juices on the side.
