Ingredients

The ingredients are:
  • 2 (2 1/2 -3 pound) chickens, quartered
  • Salt
  • Pepper
  • 1 teaspoon ginger, ground
  • 1 1/2 cups orange marmalade
  • 1/3 cup apple juice
  • 1/3 cup orange juice
  • 8 ounces apricots, dried and pitted (this is about 1 1/3 cups)
  • 8 ounces currants, dried (this is about 2 cups)
  • 1/4 cup brown sugar

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: In a roasting pan add the chicken, skin side up and season with salt and pepper and then sprinkle with the ginger.

  • Step 3: Spread the marmalade over the chicken.

  • Step 4: Then pour the two juices (apple and orange) over all.

  • Step 5: Place in oven and bake for 20 minutes.

  • Step 6: Remove from oven and scatter the dried apricots and currants into the pan and around the chicken pieces.

  • Step 7: Return to oven and bake for 45 minutes or until chicken is golden brown, basting frequently.

  • Step 8: Transfer chicken and fruits to serving platter and spoon the pan juices over the chicken and the dried fruits.

  • Step 9: Serve the remaining juices on the side.
