"This originally came from Eating Well, but I made some changes so I'm posting it here. I'm not a fan of cooked apples, but the combination of flavours and textures here is pretty darn amazing."

Step by Step Method
Step 1
Heat 1 1/2 teaspoons oil in a large skillet over medium-high heat; add chicken breasts and brown, about 4 minutes on each side.
Step 2
Remove chicken from pan to a plate, cover and keep warm.
Step 3
Add remaining oil to skillet and reduce heat to medium; add shallots and apple slices and cook, stirring occasionally, 5 minutes.
Step 4
Add cider and broth to skillet and simmer over medium-low heat for about 5 minutes, stirring occasionally.
Step 5
Return chicken to pan and continue simmering until chicken is cooked through, about 5-10 more minutes.
Step 6
Remove chicken to plates; stir parsley into apple mixture, then spoon apple mixture evenly over chicken.
