Step 1

In a small skillet saute the garlic until it is golden

Step 2

Lightly oil a baking dish large enough to accommodate the zucchini slices in one layer

Step 3

Place the zucchini slices, in the dish in a single layer, top with onions, garlic and season with salt and pepper

Step 4

Cover with the tomatoe slices, sprinkle on the parmesan and oregano

Step 5

Bake in pre-heated 375f oven for about25 minutes or until the cheese has melted. The zucchini will still have a bit of crunch to them.

Step 6

Sprinkle on the cilantro and serve

Loved it! Going throuh paperwork today noted I missed reviewing your recipe, one that was made a number of times over summer. I love zucchini and I loved this recipe. Made as posted using the lush tomatoes and sweet onions from the garden was not only easy but tasted great as well.

I halved this recipe as I only needed serving for 2, as a few people do not like Zukes here. Apart from using normal round tomato's instead of the roma variety and also using some fresh oregano as well as dried, I followed this recipe to the T and the 2 of us that enjoyed this really did love it! The Zucchini did still have some crunch and the flavors combined, all complimented each other so very well. I put everything together in the afternoon and just threw it in the oven 30 minutes before serving this with Tuna mornay for an Easter dinner. I used Zucchini, Tomato and herbs from the garden, so this was a very budget friendly recipe, which was so easy to prepare and make, and the bonus was.... that it tasted delicious. Enjoyed by the Zucchini lovers here.... This is a must try if you enjoy Zucchini.
