"It is delicious and one of my new favorite sides! It comes together quickly and is so easy that even my lil guy likes to help me make it! He likes sprinkling the cheese and herbs over the zucchini."

Step 1

Preheat oven to 350 degrees F.

Step 2

Lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet.

Step 3

Mix cheese and herbs together in a small bowl and sprinkle over the zucchini,

Step 4

Sprinkle with salt and pepper, to taste.

Step 5

Bake for 15 minutes, then place under the broiler for the last 3-5 minutes, until cheese is crispy and browned.

I left the half zucchini whole and served then as a side dish with perogies. This is not for those dieting but it sure was good. The bake time is just right. The zucchini is still crisp. This will be on the menu soon again.
