Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet.

Step 3

Mix cheese and herbs together in a small bowl and sprinkle over the zucchini,

Step 4

Sprinkle with salt and pepper, to taste.

Step 5

Bake for 15 minutes, then place under the broiler for the last 3-5 minutes, until cheese is crispy and browned.

These are delish! We love them in place of fries with our lettuce wrapped burgers. Always enjoyed!

We were over run with zucchini from the garden, so we sure enjoyed having these a few times! Yummy dipped in Ranch dressing.

I left the half zucchini whole and served then as a side dish with perogies. This is not for those dieting but it sure was good. The bake time is just right. The zucchini is still crisp. This will be on the menu soon again.

Great way to make zucchini! You could even serve these as appetizers or when doing Tapas. I loved the herb/cheese mixture and plan to share some with my friends when I make them again. Thank you for this post Megan! Linda
