"A great salad for a summers dinner. I am sure other ingredients could be added to this coleslaw if wanted ~ finely sliced water chestnuts, celery, bean shoots or basil."

Step by Step Method

Step 1

In a large bowl; combine the salad dressing ingredients and mix well.

Step 2

Add the onion, garlic and ginger and allow to stand for 20 minutes this allows the flavors to develop.

Step 3

Add the cabbage, carrot, mint leaves and mix well.

Step 4

Place in to a serving dish and garnish the salad with the chopped peanuts and the fried shallots.
