Ingredients

The ingredients are:
  • Salad Ingredients
  • 1 red onion, peeled & shredded
  • 2 cloves garlic, chopped
  • 1 knob ginger, grated, approx same size as garlic
  • 1/4 cabbage, shredded
  • 1 carrot, grated
  • 2 sprigs mint, leaves finely chopped
  • Dressing Ingredients
  • 2 tablespoons fish sauce
  • 4 tablespoons rice wine vinegar
  • 2 teaspoons castor sugar
  • 1 tablespoon sweet chili sauce
  • "Topping Ingredients"
  • Unsalted peanuts or cashews (chopped)
  • Fried shallot flakes

How to Make

  • Step 1: In a large bowl; combine the salad dressing ingredients and mix well.

  • Step 2: Add the onion, garlic and ginger and allow to stand for 20 minutes this allows the flavors to develop.

  • Step 3: Add the cabbage, carrot, mint leaves and mix well.

  • Step 4: Place in to a serving dish and garnish the salad with the chopped peanuts and the fried shallots.
