Step 1: In a large bowl; combine the salad dressing ingredients and mix well.
Step 2: Add the onion, garlic and ginger and allow to stand for 20 minutes this allows the flavors to develop.
Step 3: Add the cabbage, carrot, mint leaves and mix well.
Step 4: Place in to a serving dish and garnish the salad with the chopped peanuts and the fried shallots.
