Step by Step Method

Step 1

Score cucumbers lengthwise w/a fork & slice thin, preferably w/a slicing disk of a food processor. In a lrg bowl, toss cucumbers w/salt & let stand 1 hr.

Step 2

In a sml saucepan, bring vinegar & water to a boil w/sugar, garlic & dill seed, stirring until sugar is dissolved. Let dressing cool.

Step 3

In a colander, drain cucumbers & rinse under cold water. Drain well, squeezing out excess liquid. In a bowl, combine cucumbers w/dressing & marinate (covered) at least 1 hr & up to 6 hrs. (After about 2 hrs cucumber skin will discolor, but there will be no effect on flavor.)

This was a good recipe. I loved the scoring, makes a beautiful dish! I wanted more a tang, so I added more vinegar after it was done sitting for a while. Thanks for a new way to present cukes!

My mother-in-law makes her cucumbers like this only difference is she uses thinly sliced onion instead of garlic. We knew we would love these! Instead of the garlic I used a thinly sliced shallot and when serving topped with a dollop of sour creme. Served with cabbage rolls and creme fraiche mashed potatoes. Thank you twissis for sharing! Super simple and very fresh! I made half the recipe and it was a nice side with some heavier dishes. I would whip this up again for sure. Made for CQ17 for the Smokin' Chefs. Thanks! :)

Loved this! As there are just 2 of us I scaled it back using 1/2 of a large English cucumber. Like another reviewer I kept picking at it right up until serving time so it didn't turn out to be too much at all. I'll be making this again! Made for CQ4
