"Can use thighs. They used 1 1/2 cup orange juice, but folks thought it was to sweet so I used chicken broth also. They used a tablespoon of brown sugar, I'm not. Use Uncle Ben's rice. Folks have sauteed a cup of onions."

Step by Step Method

Step 1

Combine curry powder, 1/2 teaspoon salt and pepper and rub over both sides of chicken.

Step 2

In a skillet, combine orange juice, broth, rice, water , parsley and mustard .

Step 3

Add chicken and bring to a boil.

Step 4

Reduce heat.

Step 5

Cover and simmer 30 minutes or until chicken is done.

Step 6

Leave covered off heat for 5 minutes.

Step 7

Season to taste.
