"When I first arrived in Iceland to stay, this was my DH’s 1st food request & it was my most popular recipe at our prior "home". My sister & Siggi had named this salad because it was original for me & it also reflected my internet identity as "The Twisted One". For best results, don’t make this a day ahead, but do allow at least 2 hours for the flavors to blend & its creamy nature to develop from the finished ingredient mix (Stated time does not include refrigeration time). Step by Step Method

Step 1

Peel & cut cucumbers into 1/2-inch thick slices. Then halve each slice diagonally & transfer all the now-chunks to a large mixing bowl (See note).

Step 2

Roughly dice red onion & add to the bowl.

Step 3

Quarter tomatoes, remove seeds, rough dice the tomato pulp & add to the bowl.

Step 4

Thinly slice 1/2 green pepper, cut slices in 1-inch segments & add to the bowl.

Step 5

Toss prepared ingredients to achieve a good mix.

Step 6

Add last 6 ingredients to bowl, mix well & refrigerate at least 2 hours. Stir once or twice to allow the flavors to blend.

NOTE #1: The cucumber cut is likely a departure from the norm for you, but is key to success. If thin-sliced, most cucumbers wilt fast & do not retain any crunch


NOTE #2: When all ingredients have been combined, the mixture may appear dry & lack the creamy texture you expected. Not to worry as that will begin to change almost immediately

This salad was so easy to make and the flavors of the onion, tomato and cucumber compliment each other so well. I made everything as per recipe, although I used a different colored pepper. We really enjoyed this salad, the dressing is just wonderful with just the right flavors. This one is being made again for sure!

Nom, nom, nom with a smile! The results of a this simple salad is surprisingly yummy. Twissis is right on the development of the creaminess over time and the cucumber cutting size. I sliced the cucumber as instructed and the next day it still retained it's crunch. This is an awesome recipe for the ease, super results and the likability that would please most people that I know. A definite keeper to be placed in my repertoire of recipes. The only change I made was by using fresh parsley and used a red bell pepper instead of green due to availability. Thank you Twissis for sharing. Made it for Best of 2016 tag game.

Wow, wow, wow! I LOVE this cucumber salad! I'm saying that without even waiting the 2 hours of marinating time. I am putting this recipe into my best of 2016 file. The flavor is addictive! I love the combination of veggies (and the particular cutting size/shapes) and the sauce. I'm showing restraint right now by not heading to my refrigerator.... Thank you!
