Step 1: Peel & cut cucumbers into 1/2-inch thick slices. Then halve each slice diagonally & transfer all the now-chunks to a large mixing bowl (See note).
Step 2: Roughly dice red onion & add to the bowl.
Step 3: Quarter tomatoes, remove seeds, rough dice the tomato pulp & add to the bowl.
Step 4: Thinly slice 1/2 green pepper, cut slices in 1-inch segments & add to the bowl.
Step 5: Toss prepared ingredients to achieve a good mix.
Step 6: Add last 6 ingredients to bowl, mix well & refrigerate at least 2 hours. Stir once or twice to allow the flavors to blend.
