Ingredients

The ingredients are:
  • 1 pound cucumbers (2 medium cucumbers, peeled, sliced 1/2-inch thick & halved diagonally)
  • 1 medium red onion (roughly diced)
  • 14 ounces tomatoes (2 large tomatoes, seeded & diced)
  • 1/2 green bell pepper (thinly sliced & cut in 1-inch segments)
  • 1/2 cup mayonnaise
  • 2 tablespoons white vinegar
  • 4 tablespoons granulated sugar
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon dried dill
  • 1 teaspoon seasoning salt (more to taste as desired)

How to Make

  • Step 1: Peel & cut cucumbers into 1/2-inch thick slices. Then halve each slice diagonally & transfer all the now-chunks to a large mixing bowl (See note).

  • Step 2: Roughly dice red onion & add to the bowl.

  • Step 3: Quarter tomatoes, remove seeds, rough dice the tomato pulp & add to the bowl.

  • Step 4: Thinly slice 1/2 green pepper, cut slices in 1-inch segments & add to the bowl.

  • Step 5: Toss prepared ingredients to achieve a good mix.

  • Step 6: Add last 6 ingredients to bowl, mix well & refrigerate at least 2 hours. Stir once or twice to allow the flavors to blend.

  • NOTE #1: The cucumber cut is likely a departure from the norm for you, but is key to success. If thin-sliced, most cucumbers wilt fast & do not retain any crunch

  • NOTE #2: When all ingredients have been combined, the mixture may appear dry & lack the creamy texture you expected. Not to worry as that will begin to change almost immediately
