I added spicy ketchup as the topping. I cut the recipe in half - I have a pan that just holds a 1 pound meatloaf nicely. Your timing is perfect. The meatloaft is attractive with the specks of carrot and red pepper and it tastes wonderful. I love a beef/pork meatloaf but this one rates right up there with them. Slices beautifully - Thanks sweetcakes I'll be making this again

Very tasty meatloaf, I used fresh spinach, chopped, cooked with the other veggies. After the first 30 minutes i turned it out onto an ovenproof platter and added the topping, it took time exactily as stated, the timing was right on, perfectly cooked and very flavourful !! it also keeps together beautifully for slicing. I will be making this one again, thanks for sharing.
