Step by Step Method
Step 1
Preheat oven to 375F. Grease a large loaf pan or meatloaf pan.
Step 2
Place the ground turkey in a large bowl with the shredded carrot, bread crumbs, eggs, 3 tablespoons ketchup; set aside
Step 3
Heat the oil in a skillet over medium heat; cook the bell pepper, onion, garlic, and spinach in the heated oil until soft; set aside to cool.
Step 4
When the vegetable mixture is cooled add the ground turkey mixture. GENTLY combine with your hands. Transfer into loaf pan.
Step 5
Bake in the preheated oven for 30 minutes. Remove drain fat from pan then top with your favorite meatloaf topping. Return to oven and cook until no longer pink in the center anothr 30- 45 minutes 60 to 70 minutes. Allow to rest 7-10 minutes before slicing.
