Step by Step Method

Step 1

Heat olive oil and butter in a Dutch oven over medium heat.

Step 2

Add the onion and cook for 2 minutes, stirring frequently.

Add the garlic and cook for 1 minute.

Add tomato paste, cook don't burn.

Step 5

Add tomatoes, salt, pepper, oregano, basil and water.

Step 6

Bring to a boil, then reduce to a simmer.

Cook on medium heat for 20 minutes, until the tomatoes are tender .

Step 8

Using an immersion blender, blend until smooth.

Step 9

Add the cream, basil and feta cheese.

Step 10

Cook for 1 more minute.
