Step 1

Preheat oven to 450°F with rack in middle; oil a large 4-sided sheet pan.

Step 2

Pulse chips, 2 teaspoons chili powder, cumin, and 1/4 teaspoon salt in a food processor until coarsely ground, then transfer to a shallow dish.

Step 3

Whisk egg and remaining 2 teaspoon chili powder in a bowl.

Step 4

Season chicken with 1/2 teaspoon salt.

Step 5

Dip drumsticks in egg, letting excess drip off, then coat with crumbs, pressing to help them adhere. Transfer to sheet pan.

Step 6

Bake, without turning, until cooked through, 40 to 45 minutes or until done. Let stand, uncovered, 5 minutes.

Made and enjoyed with enough left over for tomorrow's lunch. Loved the spicy flavor and crispy crunch of the topping, best of all it looked as good as the photo! Cooking for one did scale this back but see making the full recipe for family and friends as it's definitely a company quality meal!

The coating on the chicken is amazing...we loved the spicy flavors...and the coating stuck really well...I'm going to use this on chicken fingers an nuggets...of course cooking less time...made for "Billboard" tag game...
