"Recipe source: Memories of a Cuban Kitchen cookbook These cookies use ingredients I always have on hand and the recipe makes approximately 4 dozen and if kept in a covered container will keep for one week. We tend to freeze cookies so that way they will keep a bit longer."

Step by Step Method

Step 1

In a bowl combine sugar and shortening and then add the remaining ingredients (-baking powder), blending with a wooden spoon but may have to finish blending the ingredients with your hands as the dough is stiff. Form the dough into a roll about 2 inches in diameter and wrap in plastic wrap and chill for one hour.

Step 2

Preheat oven to 350 degrees F.

Step 3

Using a knife slice the dough into 1/4 inch slices and place them on a cookie sheet. With your finger make a small depression in the center of each cookie and then bake them for 20-30 minutes.

Step 4

Store cookies in a tightly covered container and then they will keep for one week.

Loved these, and worked perfectly! I was quite generous with the lime zest so got very citrussy cookies, love them!!! Not too sweet! Thank you, great recipe, enjoyed for Culinary Quest 2019, Cuba, FeedBags. Incidentally I halved the recipe, and that worked perfectly, next time I will make the whole recipe though!
