Step by Step Method

Step 1

In a large sauce pan or pot over medium low heat add oil and then add the vegetables (onion - leek) and saute until vegetables are soft (8-10 minutes).

Step 2

Stir in next 5 ingredients (broth - thyme) and bring to a simmer and cook for 20 minutes

Step 3

Puree soup using an immersion blender until smooth.

Step 4

Stir in milk, vinegar and pepper and heat until hot.

I made as per recipe though before serving I hit it with a stick blender to smooth it out and added a little cream and blended that in before ladling into bowls and serving with a grilled cheese sandwich. Thank you Fizzybrat, made for Alphabet Tag Game on FF&F.

Made for a lovely supper soup. I used chicken broth (it was what I had on hand) worked well for me. I almost hesitated when it came to the balsamic vinegar then remembered back in the day some soups were served with vinegar - had a new bottle of OlIV balsamic I have been wanting to open and went with it. It did give it that something special! As we have always done with tomato dishes I did add a touch of sugar. It's a keeper. Happy you shared!

I made this quite a while back I thought I sent in my review I guess I somehow forgot. I know I made a few changes, used whole milk and added in garlic powder, I do know that we loved the soup and I have it saved in my favorites, thanks ellie, I apologize for not rating it sooner, This recipe was made for the Billboard game.
