"I was thumbing through some old cookbook and found this. I have no idea what the name of the book was but it was pretty old. Sounded good to me and I'm thinking it would taste good with chili or a Mexican dinner or something along those lines. Prep time is on;y aproximate"

Step by Step Method

Step 1

Preheat oven to 400 degrees and grease an 8 X 8 square baking pan.

Step 2

Place egg, tomato, oil, onion, seasoning, and cheese in blender.

Step 3

Process until chunky.

Step 4

In a large bowl mix together flour, baking powder, and salt.

Step 5

Mix in tomato mixture until just moist.

Step 6

Bake in prepared 8 X 8 in square baking pan for 30 to 35 minutes or until tested inserted comes out clean.

This was fast and easy to put together. The flavour and texture was wonderful! I used fresh garlic and chili and DH loved it. We will be having this with our soup and salad tonight. I do believe we like this better than cornbread! Thank you for sharing this delicious recipe kberry!
