"This is a recipe i make quite often during tomato season. I grow my own grape and cherry tomatoes and have loads of them, so this is a nice way to use them up. "

Step by Step Method
Step 1
Place tomatoes and green onions in a shallow dish.
Step 2
Toss in oregano and mix well.
Step 3
Sprinkle with salt and pepper to taste.
Step 4
Drizzle oil and sherry over tomato mixture and stir with spoon making sure all is coated.
Step 5
Refrigerate and let sit for at least an hour before serving to allow flavours to meld.
