Step 1: Place tomatoes and green onions in a shallow dish.
Step 2: Toss in oregano and mix well.
Step 3: Sprinkle with salt and pepper to taste.
Step 4: Drizzle oil and sherry over tomato mixture and stir with spoon making sure all is coated.
Step 5: Refrigerate and let sit for at least an hour before serving to allow flavours to meld.
