Step by Step Method

Step 1

Pour 1 cup coconut milk, garlic, lime juice, brown sugar, fish sauce, ginger, sesame oil, soy sauce, hot pepper flakes, onion powder and cayenne pepper into a large re-sealable plastic bag; swish the ingredients together to mix well.

Step 2

Add the chicken and toss to coat inside and out; seal bag and place in refrigerator for 4 to 6 hours.

Step 3

Cook in a rotisserie oven or over a BBQ rotisserie until cooked through.

Step 4

Meat thermometer should read 165 degrees when inserted into the deepest part of the thigh, just over the bottom of breast bone, about 2 hours.

I enjoyed the hint of coconut flavor on this roast chicken. The skin was crispy deliciousness and the chicken meat was so tender. I cooked mine at 425 degrees F (because I was also roasting potatoes) for about an hour. We all really enjoyed this different take on roast chicken. You could taste the Thai influences but it wasn't overwhelming. It struck the perfect chord. Thank you!

I used my Ronco Rotisserie to make it and the meat was so tender and extra juicy. The sweet/spicy was extra good with the crispy skin!
