Ingredients

The ingredients are:
  • 3 to 4 pounds whole chicken
  • 240 grams coconut milk (1 cup)
  • 2 garlic cloves, pressed
  • 3 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons fish sauce
  • 1 tablespoon minced gingerroot (prepared)
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon hot pepper flakes
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper

How to Make

  • Step 1: Pour 1 cup coconut milk, garlic, lime juice, brown sugar, fish sauce, ginger, sesame oil, soy sauce, hot pepper flakes, onion powder and cayenne pepper into a large re-sealable plastic bag; swish the ingredients together to mix well.

  • Step 2: Add the chicken and toss to coat inside and out; seal bag and place in refrigerator for 4 to 6 hours.

  • Step 3: Cook in a rotisserie oven or over a BBQ rotisserie until cooked through.

  • Step 4: Meat thermometer should read 165 degrees when inserted into the deepest part of the thigh, just over the bottom of breast bone, about 2 hours.
