Step by Step Method

Step 1

Preheat oven to 475°.

Step 2

Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use).

Step 3

Place potato skins on a greased baking sheet.

Step 4

Combine oil with next five ingredients; brush over both sides of skins.

Step 5

Bake until crisp, about 7 minutes on each side.

Step 6

Sprinkle bacon and cheddar cheese inside skins.

Step 7

Bake until cheese is melted, about 2 minutes longer.

Step 8

Top with sour cream and onions. Serve immediately.

Ten stars, if possible! These are the best potato skins I've ever made. Brushing with the seasoned olive oil took these from regular old potato skins to out-of-this-world potato skins! I only had some white goat-milk cheddar in the fridge, so the photo doesn't look as appealing as it would with regular cheddar. But still tasted MIGHTY fine! Thanks for sharing this keeper. Haven't been to TGIF in many years, but this took me on a wonderful taste-trip down memory lane!

These were even better than I thought they would be, and I thought they would be delicious. I omitted the sour cream because my kids wouldn't have eaten them with the sour cream, but other than that I followed as directed. I had small potatoes and they made for a nice, finger food side dish for lunch!

Daily Inspiration

Mmmm, Mmmm good. Love the extra attention to the potato skins ; especially the addition of the parmesan. Definitely a repeat at our house. : )
