Step 1

Preheat oven to 475°.

Step 2

Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use).

Step 3

Place potato skins on a greased baking sheet.

Step 4

Combine oil with next five ingredients; brush over both sides of skins.

Step 5

Bake until crisp, about 7 minutes on each side.

Step 6

Sprinkle bacon and cheddar cheese inside skins.

Step 7

Bake until cheese is melted, about 2 minutes longer.

Step 8

Top with sour cream and onions. Serve immediately.

This is a very easy recipe to prepare...I baked one large potato to share with the hubby during one of our appy nights...we enjoyed the crispiness of the skins with the additional cooking process...these will be made again...thanks for sharing your recipe...made for "Pick Me" tag game...
