I cut the recipe down to use up 1 pound of chicken. I was out of cucumber so simply omitted it. I served this up on crackers for lunch and it was lovely. I love the crunch the walnuts offer to this recipe, a nice change this was. I will be enjoying the leftovers tomorrow for my work lunch.
