"This recipe is from the MIL and she has been making since the early eighties, we think the original recipe came from an old Women's Weekly cookbook and the MIL made a couple of minor changes as did the DH and I when we recently made it as we did not have pork chops but we had pork fillet but not enough so we used the pork fillet with some chicken breast meat which we do when we make our recipe of https://www.recipezazz.com/recipe/ginger-lemon-pork-chicken-14256 (ginger lemon pork & chicken) but I but I will post as per the MIL's way and if you should wish to use pork and chicken that is fine. Also though the MIL put capsicum as optional for me it is not a sweet and sour unless they are included though I only used 1/2 of each as they were large and the DH does not eat them (he picks them out) but I love to eat them."

Step by Step Method

Step 1

Cut pork up into about 3/4 inch cubes, after cutting most of the fat and the rind off.

Step 2

Combine the soy sauce, egg yolk and cornflour in a bowl, add the pork and stand covered for an hour.

Step 3

Combine all the ingredients for sauce in a jug or bowl.

Step 4

After pork has been standing for the hour or as long as you have available and just before you are going to fry it, add the extra (1/2 cup) and mix thoroughly until pork is coated.

Step 5

Heat oil in wok or pan and fry pork until golden brown and cooked through, about 7 minutes and drain well; best to do it in about 3 lots if shallow frying.

Step 6

Pour of excess oil, leaving about 1 tablespoon of oil in pan and after reheating oil left in pan or wok, fry garlic for 1 minute, then add capsicum, pineapple and onion and then add the sauce mix and stir until it thickens, than add pork and vegetables and mix to reheated.
