Step 1: Cut pork up into about 3/4 inch cubes, after cutting most of the fat and the rind off.
Step 2: Combine the soy sauce, egg yolk and cornflour in a bowl, add the pork and stand covered for an hour.
Step 3: Combine all the ingredients for sauce in a jug or bowl.
Step 4: After pork has been standing for the hour or as long as you have available and just before you are going to fry it, add the extra (1/2 cup) and mix thoroughly until pork is coated.
Step 5: Heat oil in wok or pan and fry pork until golden brown and cooked through, about 7 minutes and drain well; best to do it in about 3 lots if shallow frying.
Step 6: Pour of excess oil, leaving about 1 tablespoon of oil in pan and after reheating oil left in pan or wok, fry garlic for 1 minute, then add capsicum, pineapple and onion and then add the sauce mix and stir until it thickens, than add pork and vegetables and mix to reheated.
