Ingredients

The ingredients are:
  • 500 grams pork loin chops (lean)
  • 1 green capsicum (seeded and sliced, optional)
  • 1 red capsicum (seeded and sliced, optional)
  • 1 can (215 gram) pineapples pieces (reserve juice)
  • 1 yellow onion (cut into quarters or eights)
  • 1 tablespoon soy sauce
  • 1 egg yolk
  • 1 tablespoon cornflour
  • 1/2 cup cornflour, extra
  • Oil (for deep frying or enough for shallow frying if preferred)
  • 2 cloves garlic, minced (or 2 teaspoon of jarred garlic)
  • FOR SAUCE
  • 6 tablespoon white vinegar
  • 6 tablespoons granulated sugar
  • 6 tablespoons pineapple juice (from can of pineapple pieces)
  • 6 tablespoons tomato sauce
  • Salt, pinch of
  • 1 tablespoon cornflour
  • MIXTURE OF
  • Par boiled or steamed vegetables eg cauliflower, broccoli, beans, carrot, celery etc. cut into fairly small pieces.

How to Make

  • Step 1: Cut pork up into about 3/4 inch cubes, after cutting most of the fat and the rind off.

  • Step 2: Combine the soy sauce, egg yolk and cornflour in a bowl, add the pork and stand covered for an hour.

  • Step 3: Combine all the ingredients for sauce in a jug or bowl.

  • Step 4: After pork has been standing for the hour or as long as you have available and just before you are going to fry it, add the extra (1/2 cup) and mix thoroughly until pork is coated.

  • Step 5: Heat oil in wok or pan and fry pork until golden brown and cooked through, about 7 minutes and drain well; best to do it in about 3 lots if shallow frying.

  • Step 6: Pour of excess oil, leaving about 1 tablespoon of oil in pan and after reheating oil left in pan or wok, fry garlic for 1 minute, then add capsicum, pineapple and onion and then add the sauce mix and stir until it thickens, than add pork and vegetables and mix to reheated.
