Step by Step Method

Step 1

Preheat oven to 400 degrees.

Step 2

Position one rack on the top section and one rack on the bottom of the oven.

Step 3

Line two rimmed baking sheets with foil.

Step 4

Place your carrots on the baking sheets lined with foil.

Step 5

Sprinkle with salt and pepper.

Step 6

Drizzle oil over your vegetables, and toss to coat.

Step 7

Roast vegetables for 10 minutes, then stir. Roast 10 minutes longer, then stir. Continue roasting until vegetables are tender and slightly charred, about 15 minutes longer.

Step 8

Melt butter in a heavy small saucepan, over medium heat, and stir in honey.

Step 9

Drizzle glaze over vegetables and serve.

I made a full recipe for 3 of us using 6 carrots, peeling and halving them as per recipe and baked in a 10x10 pan at 175C for 25 minutes and they came out beautifully tender and full of flavour and the 3 of us thoroughly enjoyed every mouth full thank you LindasBusyKitchen.

I wanted carrots to have with Derf's Glazed Ham Steaks for Easter supper. These were a great choice and we loved the combination. I enjoy making fresh carrots to have as our veggie and this is now one of our favorites!

Made for Easter using those awesome baby gourmet carrots that Bea and Bergy have been using - the gourmet carrots put this recipe over the top!! Great taste and awesome presentation! The recipe was a wow with regular carrots but the gourmet make it a ten! I loved this recipe as soon as the aroma filled my kitchen! What a delicious was to serve carrots. I did cheat when making this. The olive oil, butter and honey were mixed together and the carrots were coated with the mixture then baked at 350 F for 45 minutes instead of at 400 F for 25 minutes as I was baking a meatloaf and roasting potatoes at the same time. Thanks for a tasty and easy meal.
