Step 1: Preheat oven to 400 degrees.
Step 2: Position one rack on the top section and one rack on the bottom of the oven.
Step 3: Line two rimmed baking sheets with foil.
Step 4: Place your carrots on the baking sheets lined with foil.
Step 5: Sprinkle with salt and pepper.
Step 6: Drizzle oil over your vegetables, and toss to coat.
Step 7: Roast vegetables for 10 minutes, then stir. Roast 10 minutes longer, then stir. Continue roasting until vegetables are tender and slightly charred, about 15 minutes longer.
Step 8: Melt butter in a heavy small saucepan, over medium heat, and stir in honey.
Step 9: Drizzle glaze over vegetables and serve.
