  • 1 pound carrots (1 to 1 1/2 inches in diameter peeled, halved lengthwise)
  • Salt and pepper, to taste
  • 3 tablespoons oil (olive oil)
  • 1 tablespoons butter
  • 1 tablespoons honey

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Position one rack on the top section and one rack on the bottom of the oven.

  • Step 3: Line two rimmed baking sheets with foil.

  • Step 4: Place your carrots on the baking sheets lined with foil.

  • Step 5: Sprinkle with salt and pepper.

  • Step 6: Drizzle oil over your vegetables, and toss to coat.

  • Step 7: Roast vegetables for 10 minutes, then stir. Roast 10 minutes longer, then stir. Continue roasting until vegetables are tender and slightly charred, about 15 minutes longer.

  • Step 8: Melt butter in a heavy small saucepan, over medium heat, and stir in honey.

  • Step 9: Drizzle glaze over vegetables and serve.
